5 Spring Spritzers

As the warm weather blows in, our palettes thirst for something fresh and crisp. Here are a few easy beverages, with and without booze, that are just what you need for entertaining, brunch, or just an evening apéritif.

1. Carrot Mimosa

How to make it

Simply mix one part carrot juice with one part prosecco and garnish with a sprig of parsley. It looks like a carrot!

2. Strawberry Spritzer

How to make it

  • 1 package (10 ounces) frozen sweetened sliced strawberries, thawed
  • 2 liters lemon-lime soda, chilled
  • 1 can (12 ounces) frozen pink lemonade concentrate, thawed

Place the strawberries in a blender; cover and process until pureed. Pour into a large pitcher; stir in the soda and lemonade concentrate.

Makes: 2-1/2 quarts.

How to make it

Muddle a small bunch of mint leaves in the bottom of a glass with about 2 oz of lemon-lime soda. Add 2 parts white wine with 1 part lemon-lime soda. Garnish with a spring of mint.

4. Maple and Grapefruit Mocktail

How to make it

  • 2/3 ounce real maple syrup
  • 3 ounces freshly squeezed grapefruit juice, strained
  • 3 ounces ginger ale (or ginger beer if you like things stronger)

Combine grapefruit juice and maple syrup. Stir or shake until syrup is dissolved. Pour into glass and add ginger ale, stirring gently to combine. Garnish with a grapefruit wedge.

How to make it

  • 1 cup St~Germain Elderflower Liqueur
  • 1 (750-ml) bottle cold white wine
  • 2 cups cold club soda

Stir ingredients together and serve chilled in champagne flutes. Garnish with an edible flower.

Makes: 6 servings
